We got an eggplant in our CSA this week so I tried eggplant Parmesan.  Eh, it was ok.   Not sure I'll be making it again.  Eggplant doesn't really taste..... but it has a funky texture....  can't deal with the funky texture lol.

Here it is:



I covered it in bread crumbs w/ pepper and garlic.  Baked for about 10 min, flipped it and baked 10 more min.  Layered it on spaghetti, sauce and added mozzarella - baked it for just a few min more to melt the cheese.  

TGI(almost)F - this week has seemed forever long even with having Monday off.  Sheesh!!
